My parents-in-law like to buy A LOT of bananas, although no one in the house likes to eat them. It drives me crazy!
Last week, they brought home bunches of bananas enough to feed a barrel of hungry monkeys. I don’t like wasting food, but how could my husband and I eat all those bananas before they turn rotten?
I was thinking of using them to make “turon” (fried banana rolls) or bananacue (deep-fried banana), but when I told hubby about these two Filipino street food, he said a big “NO!” He likes Filipino street food, but he’s not crazy about sweets. Both “turon” and “bananacue” are sweet.
Instead of throwing away the overripe bananas, I put them on my french toast and copied Mom’s banana ice cream recipe. They’re very simple to make and you won’t need a lot of ingredients.
- Three to four pieces of bread
- A banana
- An egg
- A cup of fresh milk
- A pinch of salt
- Half a teaspoon of Cinnamon Powder (optional) (I just happen to have it. ^^)
- Two tablespoons of honey or sugar (depending on how sweet you like your toast to taste)
- A non-stick pan or any pan will do
- In a big mixing bowl, combine the egg, milk, cinnamon powder, salt and honey. Mix well.
- Preheat a non-stick pan in medium heat. Instead of oil, use butter.
- Soak your bread in the mixture.
- Put the bread on the pan and toast until each side is yellow and brown in color.
- Peel and cut a banana in half.
- Spread a little butter on the halved banana. You can sprinkle a little cinnamon, too. ^^
- Fry or grill your banana on the pan until the color turns a bit brown.
- FINALLY! Plate your french toast and put the grilled banana on top. You can put maple syrup or a piece of cheese if you want.
HOMEMADE BANANA ICE CREAM
You will need:
- bananas (as many as you like)
- milk (as much as you want)
- whipped cream (optional)
- Fruit mixer or blender
- Peel and cut your bananas into three parts.
- Put the bananas in a Tupperware and place them in the freezer. Keep them there overnight.
- When the bananas are frozen, put them in the fruit mixer or blender. Pour some milk and add a little whipped cream. Blend to the desired thickness. (Don’t put all the bananas in the blender. Do the third procedure in batches.) TIP: If you want your ice cream thicker, add just a little milk. If you want it creamier and smoother, add more milk and whipped cream. Bananas are sweeter when they are overripe, so you won’t need to put sugar in the mixture.
- Put the ice cream in a cup. I’ve got some frozen blueberries, so I topped it with blueberries. You can make your banana ice cream more appetizing by topping it with your favorite fruit, frozen or fresh. ^^
